Kerala Style Roasted Coconut Chammanthi/Chutney

Roasted Coconut Chutney Ingredients

A chammanthi/chutney (not to be confused with chutneys served with dosa) that can add punch to the most mundane item like a rice gruel (kanji) meal. Mouth-watering, lip-smacking, flavorful, tangy; all these adjectives cannot do justice to this chutney. Make this once, and you will be addicted forever. Traditionally this chutney is made by roasting whole coconut and dry red chilies over burning charcoal. I can only imagine how exotic and flavorful this version must be!

Ingredients:
Grated Coconut – 1/2 of a medium sized coconut
Dry Red Chilies – 4
Tamarind – 1/2 lime size
Curry Leaves – 1 sprig
Pearl Onion/Shallot – 2
Garlic pod – 2
Salt as needed

Preparation Time: 10 mins
Cooking Time: 15 mins
Serves: 4

Roasted coconut and dry red chilliesMethod:
Heat an iron pan and dry roast the grated coconut and red chilies in medium heat. Turn off when the coconut turns to golden color. Transfer to a plate and let the coconut and chilies cool down a bit. Peel shallots and garlic. Clean the tamarind by removing seeds and stringy membranes, if any. Grind all the ingredients in a mixer. I used a traditional stone grinder (ammikallu). Use very little water while grinding to make a coarse chutney.

Roasted Coconut Chutney

Serve with warm rice or rice gruel. This chutney can be used even for dosa or idly. I made a version without garlic and onion, and that too tasted extremely good.

Milaga Podi (Dry Chutney Powder)

There are two items that you will definitely find in every South Indian household – curd and milaga podi (dry chutney powder or gun powder as non-Southies call it). Podi is potent gun powder that can make any food item tasty! It is a must-have in every household as it has a good shelf life and can accompany most food items such as dosa, idli, and even rice. Lazy to grate coconut and grind a chutney? All you need to do is take few spoons of podi, mix some oil in it and serve along with the dosa or idli. You wont even miss the juicy coconut chutney! Podi is also a safe bet when you are packing food for long bus/train journeys.

Every household has their own secret recipe for podi and it tastes different in every house. When in school, I used to taste podi from my friends’ lunch boxes and each of them would taste different. Podi would differ in texture, taste, and visual appeal. Grainy, powdery, spicy, orange, greenish black, they come in all varieties. Recently, I tried MTR chutney powder (they market podi by that name) and I quite liked the taste of it. Unlike authentic Tamil Nadu style podi, this one is tangy. I believe tamarind is an ingredient in that recipe. Though I liked the MTR taste, being the conservative types when it comes to food, I prefer the authentic spicy taste without any tanginess.
This recipe is a mix of 2-3 different types of podis that I have had.

Ingredients:
Black gram/urad dal/uzhunnu parippu (white or black) – 1 cup
Bengal gram/chana dal/kadala parippu (optional) – 1/4 cup
Raw rice (optional) – 1/4 cup
Dried red chilly – 10
Black pepper (optional) – 1 tbsp
Curry leaves – 6-7 stalks
Asafoetida – size of a marble/2 tsp
Sesame seeds/Til/ellu (white or black) – 2 tbsp
Salt – as required

Method:
In a heavy bottomed pan (preferably iron), dry roast the grains one after the other until the grains turn red. First roast black gram. Then roast chana dal, followed by rice. Okay, I cheated! I roasted chana dal, kept it aside and then roasted the raw rice and black gram together. That works. When the black gram and rice are half done, add red chillies, black pepper, asafoetida, and curry leaves. If you are using asafoetida powder, you can add it towards the end of the roasting exercise. Turn off the fire and then add the sesame seeds and salt. Keep aside and let it cool down a bit.

While the roasted grains are still warm, dry grind them in a mixer. You can choose to make it powdery or grainy as per your preference. Store in a dry air tight jar. Will stay good for 3-4 months.

Choice of oil to be mixed with podi is a personal preference. Podi is served along with sesame seed oil (til oil/ellenna/nallenna) in most parts of Tamil Nadu. No points for guessing the oil that Keralites prefer!

Idlis and dosas soaked in spicy podi are a rage in restaurants these days. Whether you have a chutney and sambhar to go along with it or not, a well-made podi can up the taste quotient of even a poorly made idli/dosa.

Coconut Chutney

A simple coconut chutney to accompany dosa, sevai, or idlis.

Ingredients:
Coconut (scraped/cut) – 1/2 of a medium sized coconut
Shallots* – 2 nos
Dry red chilies* – 3
Water – 1/2 cup
Curry leaves – 1 stalk
Mustard seeds – 1 tsp
Oil and salt – As required

* In case any of these ingredients are unavailable, check the alternate ingredients section for other options.

Alternatives:

A small piece of onion can be used if shallots are not available. You can use green chillies,a healthier option, instead of red chillies.

Preparation Time: 5min.

Cooking Time: 5min.

Method:

Grind the scraped/cut coconut along with shallots and red chillies in a mixer to a coarse mixture. Add small amounts of water to aid proper grinding. Remove to a container. Heat Oil in a pan. Add mustard seeds. When they splutter, add curry leaves and turn off the fire and add this to the ground chutney. Add required amount of salt.

Ada Dosa

Instant, crispy, filling, spicy, hot and healthy! Served with avial, jaggery, and butter – a beautiful blend of the Tamil and Malayalam food culture. Perfect breakfast for cold winter mornings. You need that sesame oil intake to keep your skin supple and moist during winter. Lentils, shallots, curry leaves, and asafetida make this a very healthy and protein-rich breakfast. Remembering my grandmother, Rukmini, and my valiamma, Madhavi, who were famous for their special ada dosa (at home we call this varatti). Relatives who are planning to visit would inform in advance so that my aunt can prepare and be ready with the batter. Both and grandma and valiamma wouldn’t use a ladle to spread the thick batter on the hot dosa tava. They would spread it with their hand. I think their love found way into the food also!

Preparation Time:
(for batter):  10 min, previous night.
Cooking Time: 5 min.

Ingredients:
To Soak Overnight
Raw rice – 1/2 cup
Parboiled rice – 1 cup
Bengal gram(Chana dal, Kadala parippu) – 1/4 cup

At the Time of Grinding the Batter
Black gram(Urad dal, Uzhunnu parippu)* – 1/4 cup
Peeled Shallots* (cheriya ulli) – 1 cup
Dried Red chillies OR powder* – 8 – 10 nos or as required
Curry leaves – 5-6 stalks
Oil [preferably sesame(til)] – 2 tablespoons
Salt

*Alternatives:
Red chilly – Red chilly powder or Green chilly
Shallots – Onion can be used but does not give the same taste. Shallots can be substituted with asafoetida also.
Black gram – White urad dal can be used and does not affect the taste.

Method:
Wash and soak the raw rice, parboiled rice, and chana dal overnight.
Grind the dals and rice along with shallots, red chillies, and curry leaves to make a coarse paste. Ensure that the batter is very coarse and not watery. Add salt. The trick to get the right consistency is to remove all water from the soaked rice and grind with very little water.

Heat griddle and pour about a full ladle of batter on to the griddle.

Spread the batter around by patting with a flat spoon to a make a circle. The fire should be on high.

Add a tsp of oil around the dosai and let it cook for about a minute.

This is a very healthy diet. The use of asafoetida/shallots helps in easy digestion. Curry leaves have a great cleansing effect on the intestines. Weight watchers should watch out for the butter they eat with the Ada Dosai though!

This recipe is a beautiful blend of the Tamil and Malayalam food culture. Everyone in our family, irrespective of age, has been a huge fan of Ada dosai. And all new additions to the family have come around to liking it equally well. Its all about the smell….!!

Methi Leaf Dosa

Soft, instant, healthy, and appetizing dosa.

Ingredients:
To Soak
Raw rice – 2 cups

At the time of grinding the batter:
Shallots* (peeled) – 1/2 cup
Dry red chillies – 6-8
Salt

After grinding the batter:
Methi/fenugreek/uluva leaves– 2 cups
Gingely oil – 2 tablespoons

*Alternatives:
Red chilly – Red chilly powder
Shallots – Onion can be used but does not give the same taste.

Preparation Time (for batter): 10min
Cooking Time: 5min.

Method:
To Make Batter:
Wash and soak the raw rice for 4-5 hours.
Grind the rice along with the peeled shallots and red chillies. The batter should be smooth and neither too thin nor thick. Add enough water to the batter to get a spread-able consistency. Chop methi leaves and add it to the batter. Add salt. Mix well.

Heat griddle and pour about a full ladle of batter on to the griddle. Spread the batter around carefully using the bottom of the ladle. Maintain low fire while spreading the dosa.

Close the dosa with a lid. The fire should be on medium.

Remove the lid after about 40 seconds to a minute.

Pour 1/2 tsp oil around the dosa and flip it over. The dosa does not need to be closed with the lid now. Let it cook for about 30 seconds.
Serve hot directly onto the plate!

Trivia:
This recipe is a family specialty. The traditional choice for methi leaves is drumstick leaves. Since they are not available where I live, I use methi leaves. This dosa needs a medium level expertise in dosa making. It can be slightly tricky for a beginner to spread this batter. Since only raw rice is used, the batter tends to stick to the griddle if the fire is too high. The key is to maintain low fire while spreading the batter.

Onion & Coconut Chutney

Chutney to add spice to crisp dosa or soft fluffy idlis.

Ingredients:

Shallots* (chopped) – 15-20
Garlic* (finely chopped) – 1 pod
Red chilies – 3
Curry leaves – 1-2 stalks
Coriander leaves – 1-2 stalks
Coconut (scraped/cut) – 1 medium cup
Oil and salt – As required

Alternatives:
Onions (medium-sized) – 2
Garlic is optional

Preparation Time: 5min.

Cooking Time: 5min.

Method:
Heat Oil in a pan. Add finely chopped garlic and sauté. Add onions and red chilies. Fry till Onion turns into golden brown. Add curry leaves and coriander leaves before turning off the fire. Turn off the fire and add coconut and salt.

Grind the fried mixture in a blender first without adding water. Add 2-3 tablespoons of water and blend it well. Be careful about the amount of water you add. The chutney should not be watery. The texture of the chutney should be coarse.
