Many people dislike brinjal. But this preparation is something that can tempt even a brinjal hater. Its simple and yum.
Ingredients:
Brinjal/Eggplant (Bartha Baingan) – one medium sized
Onion (small) – 1 (you can use a few shallots also)
Red chilly powder – 1 tbsp
Salt – as needed
Oil – 3 tbsp
Method:
Cut brinjal into thin round pieces.
Grind the onion and red chili powder salt into a fine paste. Coat the brinjal pieces with the ground paste along with salt. Mix well and keep aside for at least half an hour.
Heat oil in a flat thick bottomed vessel. When the oil is sufficiently hot, place the brinjal pieces on the oil one by one. Keep the fire on Low-Medium.
After a minute or two, turn over the brinjal pieces using a flat ladle. When both sides of brinjal is sufficiently brown, remove from fire. Place on absorbent paper to remove excess oil. Can be served as a snack or served with rice.
